Noguchi Naohiko

Nokuchi Shougen is a legendary sake brewer in Japan. He is renowned for promoting the trend of premium sake and reviving the traditional Yamahai brewing method.

Over the years, his sake has received numerous awards, and he himself has been honored with the prestigious title of “Contemporary Master Craftsman” designated by the Ministry of Health, Labour and Welfare.

Pierre Girardin

Special 456-liter barrels are used for slow maturation of his white wine, allowing the fine lees to gradually age. These meticulously crafted barrels from François Frères and Seguin-Moreau help maintain freshness and limit the impact of wood on the flavor of the wine.

His white wines retain a perfect balance with minimal intervention, without interfering with each other, leaving behind a captivating and elegant wine body. Sulfur is hardly added throughout the entire winemaking process.

Chateau de Charodon

Chateau de Charodon are making waves in the Burgundy wine scene.

Chateau de Charodon wines are highly sought-after for their complexity and balance, with a focus on Chardonnay, Pinot Noir, and Aligoté. Quality and sustainability has earned it a devoted following and recognition for capturing the essence of Burgundy while pushing boundaries.

Domaine Claude Dugat

Claude Dugat and his children produce highly prized and limited quantities of wines, particularly their prestigious Chambertin wines.

Their Chambertin vintages showcase remarkable freshness, elegance, and complexity. The domaine’s microscopic yields and minimal intervention during vinification result in consistently exceptional wines that age gracefully.

Laurent Ponsot

Laurent Ponsot, the “father of wine technology,” revolutionizes winemaking with innovations like a bullet-shaped cork that eliminates issues like leakage, oxidation, and cork taint.

The high-tech cork allows controlled oxygen ingress for optimal aging. The label features a temperature-sensitive sensor, while each bottle has an NFC chip for authenticity and production details. Ponsot’s wines embody terroir and traditional winemaking principles, despite his technological advancements.

Chandon Brut NV

Chandon Brut is a perfectly seasoned little sparkling. A mix of Chardonnay, Pinot Noir and Meunier grapes are all carefully selected from cool climate spots across Victoria.

The result is a fresh, vibrant finish with hints of apple sorbet, lemon zest, sourdough, and nougat.
